- Vinegar1/4 cup
- Sugar1 tablespoon
- Water1/2 cup
- Salt2 tablespoon
- Cut the Japanese cucumber into slices, you can cut it by hand or pass it on a mandolin
- Season with plenty of salt and leave in a Pandora for 20 min to drain all the liquid.
- Then wash the cucumbers well to remove the salt and dry well.
- In a pan, bring the water, sugar and vinegar to a boil, as soon as it boils, turn it off, wait to cool down and add it to the cucumber.
- Finish with sesame, you can consume it immediately or leave it preserved to consume
