  • Milk to taste
  • Salt and pepper to taste
  • Breadcrumbs to taste
  • Oil to taste
  1. Cut the onion into rings. Detach them and let them soak in ice water for 15 minutes to remove the acidity.
  2. Meanwhile, put the wheat flour in a bowl and season with salt, pepper and paprika. Keep adding cold milk until it becomes a homogeneous cream, neither too thick nor too thin.
  3. In another container, put the breadcrumbs and season with just salt.
  4. Remove the onions from the sauce and dry them well before you start to coat them. Dry one by one.
  5. Turn on the heat of the oil, which should be hot, but not so much to allow time to cook the onion internally.
  6. To coat, pass the onion in the cream of flour with milk, wrap the whole ring and then coat in the breadcrumbs and take it to fry. Remove when they are golden.
