- Ground black pepper to taste
- Chia to taste
- Olive oil1 dessert spoon
- In a non-stick skillet heated with oil (low heat), add the lightly beaten eggs.
- Stir for 1 minute and add the curd, salt and pepper.
- Keep stirring until the eggs are cooked to the desired point.
- Serve on a slice of toasted wholegrain bread and sprinkle chia on top.
