Cornmeal bread with coconut and cheese

  • Demerara sugar1 cup
  • Whole eggs2 unit(s)
  • Soybean oil1 cup
  • water mill cornmeal2 cup
  • White wheat flour1/2 cup
  • Mozzarella cheese150 g
  • Salt1 teaspoon
  • Fennel and Cinnamon to taste
  • Shredded coconut flakes (no sugar)100 g
  • Whole milk3 cup
  • Baking powder1 tablespoon
  1. cup = American cup Blend the first 3 ingredients in a blender for 1 minute. Then add the milk, cornmeal, salt and cheese and beat for another 5 minutes.
  2. Turn the beat in a bowl and add the other ingredients leaving the yeast for last. Gently mix with a wooden spoon or hand whisk.
  3. Turn the dough into a greased round hole shape (24 cm) and distribute grated coconut flakes over the entire dough. Bake in a preheated oven at 180 degrees for 35 minutes.
