  • Previously desalted cod400 g
  • Milk to taste
  • Wheat Flour125 g
  • Egg1 unit(s)
  • Cold water200 ml
  • Salt to taste
  • Black pepper to taste
  • Sunflower oil300 ml
  • Olive oil (not extra virgin)300 ml
  1. With your hands, break the cod into flakes and let it soak in enough milk to cover for about two hours.
  2. Finely chop the onion.
  3. Drain the cod's milk, discarding it.
  4. Make the fritters dough by mixing the flour, egg and ice water. Season the dough with salt and pepper.
  5. Put the oil and olive oil in a pan and heat to about 170ºC.
  6. Mix the cod in the dough. Take a good spoonful of the dough and carefully pour it into the hot oil. Repeat with other spoonfuls to form more fritters. Fry about 5 fritters at a time, so as not to overfill the pan and cool the oil temperature. When they are well golden, remove the fritters with a slotted spoon and drain on a paper towel. Serve immediately.
