- Salted cod300 g
- Red onion1/2 unit(s)
- Chopped Parsley1 tablespoon
- Extra virgin olive oil to taste
- Black pepper to taste
- Portuguese black olives50 g
- Soak the cod in the fridge, changing the water every 12 hours. The total time will depend on which type of cod to use, for a high loin soak 3 days, 2 days for a medium fillet and for already shredded cod 12 hours is enough.
- After soaking, shred the cod with your hands (if you used cod fillet or slices) taking care to remove the skin and bones while shredding.
- Thinly slice the red onion into half moons. Soak in ice water for about 30 minutes and drain well.
- Season the cod with black pepper, chopped parsley and a generous amount of olive oil. Knead the mixture with your hands.
- Mix with the onions and transfer to the serving plate.
- Garnish with the olives and serve with toast.
