- Starting the dough making the Poolish, mix all the ingredients in a bowl and close with cling film and let it rise. In another bowl, put the dough ingredients and the Poolish after increasing in size, mix all the ingredients and knead for 15 minutes and then let the dough rest for 10 minutes and then knead another 15 minutes.
- Roll out the dough in a rectangle, not too thin, brush the entire surface of the dough with butter, then sprinkle the brown sugar and cinnamon powder. Roll the dough like a rocambole, cut into slices the size of two fingers, take it to a greased roast and place one next to the other with space for dough to rise. Bake in the oven at 160°C until golden.
