  • Margarine or butter4 tablespoon
  • Wheat Flour500 g
  • Chicken stock2 unit(s)
  • Salt1 to taste
  • Mozzarella cheese150 g
  • Gorgonzola cheese50 g
  • Ricotta5 tablespoon
  • Breadcrumbs2 cup
  • Eggs3 unit(s)
  • Oil for frying1 to taste
  1. Put the water, butter, chicken broth and salt to boil.
  2. Add all the flour stirring very quickly until it disgraces from the bottom of the pan.
  3. Let it cool, meanwhile mix the ricotta, gorgonzola and grated or finely chopped mozzarella until it forms a paste.
  4. Knead the dough, then shape the croquettes and fillings with the paste. Set aside.
  5. Beat the eggs. Dip in breadcrumbs and fry in hot oil. Make sure they are well closed so as not to leak the cheeses.
