  • Wheat Flour500 g
  • Water500 ml
  • Saffron1 tablespoon
  • Nutmeg1 tablespoon
  • Blonde Powder1 tablespoon
  • Butter100 g
  • Sunflower oil1 l
  • Minas Gerais cheese500 g
  • Salt2 tablespoon
  • Black pepper to taste
  1. Make a “broth” with water, salt, bay leaf powder, saffron, nutmeg and black pepper
  2. The broth should have a lot of flavor and be salty because when the flour goes in, the seasonings soften
  3. Add butter to the broth, reduce the heat
  4. As soon as it starts to boil, over low heat, add the flour.
  5. Stir well with a wooden spoon, incorporating the flour into the broth for about 10 minutes.
  6. Remove the dough from the pan, transfer it to a marble table or a plastic board
  7. Let it cool a little, meanwhile, cut the cheese into medium cubes and season with a little salt
  8. Knead the dough until it is smooth
  9. Model the desired size balls, just put the cheese and close, it's super easy!
  10. Assemble the frying square: a tall pan with sunflower oil, a plate with a paper towel and a slotted spoon in hand
  11. With the hot oil, fry the balls little by little, never put too many so they don't burst!
