  • Boiled Cassava200 g
  • Butter1 tablespoon
  • Ground beef300 g
  • Onion1/2 unit(s)
  • Garlic1 unit(s)
  • Green chives to taste
  • Salt and pepper to taste
  • Oil or olive oil of choice2 tablespoon
  1. Prepare the ground beef by sautéing the garlic and onion with a little oil. Let all the water in the meat dry, season with salt and pepper to taste and finish with chives. Reserve and let cool completely.
  2. Knead the cooked cassava well while still hot (it cannot be at a melting point, it has to be soft without falling apart, this will ensure a firm dough without needing flour). Add the butter and knead the dough until smooth.
  3. At this time you choose whether you want croquette or coxinha. 👉 Croquette: mix the cold ground meat in the pasta, be careful not to exaggerate and lose the point to shape the cupcake. 👉 Coxinha: make a ball with the dough and flatten it like a disc. Place the stuffing in the middle and close in the shape of a coxinha or balls. Make sure they are tightly closed.
  4. Bread: in a bowl beat an egg and in the other place breadcrumbs or Panco First pass in the egg and then in the breadcrumbs, do this 2 times. Note: breading is optional, I made the croquette without breading to test.
  5. Preheat the Air Fryer for at least 5 minutes. Spray some oil or oil spray on the cookies if you like. You can brush if you don't have spray. This ensures that the shell doesn't dry out so much and tastes closer to the fried version 🤭 ⏱️ Bake for 15 minutes in the Airfryer or until golden. Be careful not to exceed the time too much, otherwise they will start to crack.
