Carrot Cake with Chocolate Icing (Low Carb)

  • Egg3 unit(s)
  • Xylitol1/2 cup
  • Almond flour1 cup
  • Coconut oil3 tablespoon
  • Yeast1 tablespoon
  • Fresh cream1 cup
  • Chocolate 70%300 g
  1. In the blender, beat the carrots with the eggs, the culinary sweetener, the almond flour and the coconut oil until obtaining a very smooth and homogeneous mass.
  2. Finally add the baking powder for cake and mix by hand.
  3. Grease a shape with a little coconut oil and pour the dough.
  4. Bake in a preheated oven at 200°C for approximately 20 minutes.
  5. Roof: In a pan, heat the fresh cream and add the chocolate. Mix well until smooth. Spread the frosting over the cake and serve.
