Buttered cornmeal cookies

  • wheat flour150 g
  • fine corn flour / cornmeal200 g
  • chemical yeast1 teaspoon
  • brown or regular sugar150 g
  • butter in ointment point150 g
  • extra virgin olive oil1 tablespoon
  • warm water120 ml
  • salt1 tablespoon
  1. Way of doing: In a bowl mix the flours, yeast, sugar and salt. Add the cubed butter and the oil. Using your fingertips, rub the ingredients until the butter breaks up and you get a kind of fine crumbs. Start adding the water little by little, go involving the ingredients until you get a ball of dough, just add the amount of water necessary to reach the point. Place the dough on a plastic sheet, use a rolling pin to flatten it a little, so the dough cools faster. Cover the top of the dough with plastic and take it to the fridge for 30 to 60 minutes, the dough should be firmer to be worked. Place the dough on the countertop lightly sprinkled with corn flour and using a rolling pin, roll out the dough so that it is approximately 3 mm. Cut your cookies, arrange them in a shape, you can leave a little space between them, as they spread very little. Bake for 15 to 20 minutes in a preheated oven at 200C. Remove the cookies from the oven and let them cool on a wire rack, then store them in a tightly closed jar.
