  • unsalted butter8 tablespoon
  • Chopped semisweet chocolate or drops180 g
  • Refined sugar3/4 cup
  • Brown sugar1/2 cup
  • Eggs3 unit(s)
  • Vanilla essence1 teaspoon
  • Salt1/2 teaspoon
  • Cocoa powder2 tablespoon
  • Wheat flour3/4 cup
  1. Start by preheating the oven to 180°.
  2. Add the chopped chocolate with the butter and microwave every 30 seconds, stirring at each interval with a silicone spatula (hard bread). Do this until the chocolate is completely melted, being careful not to burn it.
  3. In a reasonably sized bowl, sift the sugars. Add the ganache we made and mix well until all the ingredients are incorporated.
  4. Then add the eggs 1 by 1, beating well with the spatula. Crack an egg into a small bowl and add to the dough one at a time, so if one is spoiled you don't lose the entire recipe. Beat well after each addition of egg.
  5. Add salt and essence. Whisk until blended.
  6. Sift the cocoa and flour over the dough. Beat well, but not too much. If we beat too much, we will develop the gluten in the flour, which will make the brownie heavy and doughy. Place in a rectangular shape of 20x30, lined with parchment paper. Leave one edge of each end out. This will help unmold.
  7. Bake in the oven for a maximum of 30 minutes or less. Watch the oven. If using an electric oven, leave the heat on the bottom until the end of cooking.
  8. Remove from oven and let cool on the countertop. When it's warm, cover with something and take it to the fridge for 1 hour.
  9. Remove from the fridge, cut into equal sizes and carefully unmold by gently lifting the parchment paper and pushing the slice upwards as if it were a sticker. Enjoy your food.
  10. IMPORTANT: If you remove too much before 20 or 30 minutes, it will turn into a Petit gâteau. If you take it out after 30, it will turn into a cake. Watch the oven, notice that at this time a crust forms around it. It's because it's ready. Don't stick a toothpick in to see if it's done, this is not a cake. It has to be wet inside. Once the baking time is over, take it out immediately. TIP: If you want to make to sell, a good idea is to buy those aluminum marmitinhas. A kit of 100 units is very cheap on the internet. Once that's done, you can innovate. Add other things, create new flavors. Brownie looks great with some nut in the dough. My favorite is with hazelnut. 😍
