- Panko flour1 cup
- Grated Parmesan Cheese2 tablespoon
- Egg2 unit(s)
- Salt to taste
- Black pepper to taste
- Cut the eggplant into 1/2 cm thick slices and season with salt and pepper.
- Mix the grated cheese with the panko flour.
- Dip the slices of eggplant in the beaten egg and then in the panko flour and cheese mixture.
- Place in air fryer heated to 200 degrees, until golden.
