- Wheat Flour400 g
- Water250 g
- Biological Yeast Powder4 g
- Salt8 g
- Black Olives60 g
- Green Olives60 g
- First make the sponge, putting the wheat flour, water, baking powder in a bowl and mix everything until the dough is homogeneous, cover the dough and let it rest for 60 minutes. In another bowl put the wheat flour, water, salt, sponge and mix all the ingredients.
- Transfer the dough to a countertop and press and fold the dough to absorb well. The dough should be very smooth, if you need water, add it little by little. Then open the dough to add the olives and then close.
- And knead very gently to incorporate the fillings and then cover the dough with a cloth and let the dough rest until it increases in volume. Put the dough in the iron pan with butter paper. Preheat the oven to 250°C.
- Close the lid and bake the bread, after 20 minutes remove the lid from the pan and bake the bread for 10 to 15 minutes or until the bread is golden brown.
