  • Avocado (or mayonnaise)1/3 cup
  • Arugula to taste
  • Mustard1 tablespoon
  • Seasonings to taste
  • Slices of bread (I recommend Italian)4 unit(s)
  1. Start by cooking the egg. Place in water and, after turning on the fire (high) mark 10 minutes. Remove, peel and separate the yolks from the whites. Cut the whites into cubes and knead the yolks. Season the egg whites with salt and pepper.
  2. Also mash the avocado and season with salt and pepper. Mix the avocado, egg yolks and mustard. Add the egg whites and mix well. Taste and adjust seasoning if necessary.
  3. Rub a clove of garlic on the bread (optional) and put it in a frying pan with a little oil for 2 minutes on each side.
  4. For assembly, place a layer of egg paste, a layer of arugula leaves and another layer of egg paste on the bread. Garnish with chopped parsley and enjoy!
