Bacon Chicken Strudel with Filo Pasta

  • Lemon Juice10 g
  • Salt2 g
  • Water for stitching to taste

  • Bacon25 g
  • Chives10 g
  • Red Pepper30 g
  • Onion30 g
  • Mustard10 g
  • Salt and Pepper to taste
  • Clarified Butter1 tablespoon
  1. For the dough, mix the wheat flour, lemon juice, 2g of salt.
  2. Add the water little by little until you form a smooth dough, without lumps and unglue from your hands.
  3. Cover with plastic wrap and let rest for 20 or 30 minutes.
  4. Then, on a bench, sprinkle cornstarch and roll out the dough with the help of a rolling pin until it is very thin.
  5. For the filling, cut the breast into cubes and set aside.

  8. Add the chicken and sauté well in seasoning.
  9. Add the bacon, mustard, chives and salt and pepper and mix.
  10. Let cool and shred the chicken.
  11. Stuff the dough with the chicken and fold, gluing the ends with a little water.
  12. Brush the dough with clarified butter (butter taken to the fire to melt until it forms a white foam and remove it).
  13. Put it in a greased shape with olive oil and take it to the oven at 160° for about 20 minutes or until the dough is cooked and golden.
