  • Eggplant1 unit(s)
  • Breadcrumbs100 g
  • Paprika1 teaspoon
  • Salt to taste
  • Wheat flour1 cup
  • plant milk1/2 cup
  • Flaxseed Flour50 g
  1. Cut the eggplant into slices up to 1 cm thick.
  2. Soak in salted water for 10 minutes.
  3. Mix the flour, milk, paprika and salt.
  4. In a bowl, mix the breadcrumbs and flaxseed.
  5. Dip the eggplant slices in the flour and milk mixture and then in the breadcrumbs.
  6. Repeat the process until well coated.
  7. Fry in hot oil.
