- Coconut Flour or Cornmeal1/4 cup
- Corn1/4 cup
- Butter1 dessert spoon
- Light cream or coconut milk or yogurt2 tablespoon
- Coconut water1/4 cup
- Baking powder1/2 tablespoon
- Cinnamon to taste
- grated coconut to taste
- Beat the egg, butter, corn, cream and sweetener in a mixer or blender.
- In a bowl place the coconut flour and yeast.
- Pour the mixture out of the blender and mix well. If the dough is too thick (if you use coconut flour it draws a lot of liquid) add the coconut water and mix well.
- Put it in mugs or molds that can go in the microwave. Makes about 5 cookies.
- Microwave for 2:30 minutes.
- Garnish with grated coconut, cinnamon and corn.
- It's delicious, enjoy!
