  • Shoyu1/4 cup
  • Orange juice3/4 cup
  • Sake1/2 cup
  • Olive oil1/4 cup
  • Garlic Clove1 unit(s)
  • Sicilian Lime (zest) to taste
  1. Pour soy sauce (¼ cup), orange juice (¾ cup), sake (½ cup), olive oil (¼ cup), 1 clove of garlic and lemon zest
  2. Boil for 3 minutes, strain, let cool and add toasted sesame oil (2 tbsp)
  3. Use to marinate tuna loin (500 g) for 12 hours in the fridge
  4. Brush the piece with olive oil, grill for 2 minutes on each side and slice after 1 hour in the fridge.
