Tilapia Rolê with Sicilian Lemon Spinach

- Tilapia1 kg
- Spinach3 cup
- Butter1 tablespoon
- Thyme2 tablespoon
- Salt and Black Pepper to taste
- Sour cream200 g
- Onion (cut into cubes)1/2 unit(s)
- Garlic (clove)2 unit(s)
- Vegetable broth1 cup
- Tomato sweetgeape1/2 cup
- Sicilian lemon zest to taste
- Olive oil to taste
- Sauté the spinach, with 1 tablespoon of olive oil, 1 tablespoon of chopped thyme, salt and pepper to taste. After sautéing, squeeze out the liquid well.
- Cut the tilapia in half, along the spine. Season with Salt and pepper. Place the spinach in the middle of the fillet, roll up and close with a toothpick. Place the rolls on a baking sheet. Drizzle with olive oil and bake for 20 minutes at 180c.
- In a skillet, sauté the onion and garlic with the butter. Add the cream with the whey and the broth. On low heat, mix well. Turn off the fire. Add lemon zest. Season with salt and pepper to taste.
- Place the sauce on the bottom of the plate and place 2 rolls per plate of tilapia. Finish with halved tomatoes and sprinkle with your favorite herb (chives, parsley, chives, sprouts, thyme, etc.)
- SUBSTITUTIONS 1- you can use any other thin fillet white fish: St. Peter, trout, hake, hake, croaker. 2- if you don't have spinach, put a carrot, onion or zucchini in strips. 3- Swap the tomato for chopped normal tomato.
