- Clean medium shrimp300 g
- Season the shrimp with salt and pepper. Boil water in a couscous pan. Add the prawns and leave for 5 minutes.
- Cut the red onion, mango, chili pepper into brunoise and add apple cider vinegar, salt and sugar.
- Grind roasted and salted almonds and chop the chives.
- Place the prawns on a plate, add the vinaigrette, almond farrofa, chives and capelin roe.
