- Pink shrimp seasoned with salt and black pepper500 g
- Cognac50 ml
- Finely chopped onion1 tablespoon
- Sparkling Brut500 ml
- Cream300 g
- Green smell, salt and black pepper to taste
- Brown the prawns with a drizzle of olive oil, add the cognac and flambé. Book the prawns.
- In the same skillet, add another strand of olive oil and brown the onion. Add the sparkling wine and let it reduce by 1/3.
- When it reduces, mix the cream until it's very homogeneous and cook for about 5 minutes. Adjust salt and kingdom pepper and finish with green smell.
