  • Dry White Wine200 ml
  • Carnaroli rice300 g
  • Shrimp Broth (go to Tips to learn how to make it)1 l
  • Medium Gray Shrimp600 g
  • Parsley to taste
  • Salt to taste
  • Black Pepper to taste
  • Parmesan cheese (freshly grated) to taste
  1. Let's save the pan, so in the pan that will prepare the risotto, melt some butter and sear a few units of the whole shrimp, seasoned with. Kingdom salt and pepper. 30 seconds on each side and set aside. They will be the ones on top in the plating
  2. In the same pan, melt a spoon of butter and add the onion to fry. After they become transparent, add the rice and let it fry together with the onion. When it's dry, add the white wine and stir. When the wine evaporates, it's time to start adding the shrimp broth, which should be in a pan on the side and hot.. Add with a ladle and keep stirring
  3. As the rice dries, add the broth and stir until you reach your favorite point in the rice.
  4. Try the salt, adjust, remembering that the cheese will still be added. A little before, very little of the rice reaches the desired point, put the rest of the clean and raw shrimp, and mix. Turn off the heat, add the rest of the butter and mix to let it shine. At this point, if you like cheese with seafood, add a generous portion of cheese and stir. Add the chopped parsley and serve immediately.
  5. Plate and place the sealed shrimp for decoration. You can sear the prawns in a separate skillet at the end of the process to keep them warm.
