- Clean shrimp400 g
- Leek1/2 cup
- Arborio rice2 cup
- Olive oil to taste
- Butter4 tablespoon
- Chopped Onion1/2 cup
- Dry white wine1/2 cup
- Orange juice1/2 cup
- Water (maybe not use all)2 l
- Shrimp Sazon7.5 g
- Salt and Black Pepper to taste
- In a hot skillet with olive oil, add the prawns and sauté, stirring carefully until they turn pink, set aside;
- During this time, bring a mug of water to the boil and add the seasoning seasoning. When it boils, lower the heat;
- In a pan, put 2 tablespoons of the butter and take it to the low fire. When the butter has melted, add the chopped onion and leek and sauté until the onion is translucent;
- Add the rice and sauté for 2 minutes, stirring constantly;
- Add the white wine, stirring constantly until it evaporates;
- Add the orange juice and mix;
- With the help of a ladle, add a ladle of seasoned water little by little, stirring constantly. Keep doing this whenever the previous water dries up, for approximately 15 minutes on high heat;
- As you do, always check the point of the rice, it needs to be al dente, but creamy. If it is still raw, repeat the operation until it is ready;
- In the last addition of the water, do not let it dry completely so the risotto becomes creamy. Add the sautéed shrimp, mix well and turn off the heat;
- Finish adding the last 2 tablespoons of butter and mix well. serve.
