- Sea bass fillet200 g
- Red Onion in Half Moon50 g
- Chopped Girl's Finger Pepper5 g
- Tahiti lemon40 ml
- Sicilian lemon40 ml
- Pear orange40 ml
- Tahiti lemon zest2 g
- Sicilian lemon zest2 g
- Chopped coriander3 g
- Crispy Mexican Corn10 g
- Sweet potato sliced in slicer50 g
- Cut the fish into cubes and marinate in the juices for 15m
- Add the red onion , girl's finger pepper , cilantro and zest. Adjust the salt and leave for 5 minutes.
- Fry the potato slices in oil over low heat until crispy and dry.
- Serve the ceviche with the corn on top and the potatoes on the side.
