- Clean diced sardines500 g
- Coconut milk300 ml
- Olive oil3 tablespoon
- Palm oil2 tablespoon
- Finely Chopped Garlic4 unit(s)
- Sliced Onion1 unit(s)
- Sliced Red Bell Pepper1 unit(s)
- Sliced green bell pepper1 unit(s)
- Sliced Yellow Bell Pepper1 unit(s)
- Ground Saffron1 dessert spoon
- Curry1 teaspoon
- Lemon1 unit(s)
- Black pepper to taste
- Salt to taste to taste
- Sliced Tomatoes2 unit(s)
- Season the sardines with lemon, black pepper, salt and seasonings of your choice
- In a pan add the olive oil and garlic, sauté a little, then add the palm oil and coconut milk, mix well over low heat, add curry and saffron to the sauce, stirring well and salt to taste (the whole process lasts for around 3 minutes
- Now add a layer of onion, tomato and peppers
- Then add the sardines, and finish with more onions, tomatoes and peppers.
- Let it simmer over low heat for 00:20 to 0:30 minutes, stirring the bottom part from time to time so that it does not stick and burn (remove the pieces of fish gently so as not to break them up
- Suggestion: accompany with very fresh rice, leaving the preparation time in the sauce the sardine bones will easily fall apart
