- Salmon500 g
- Sicilian lemon1/2 unit(s)
- Concentrated passion fruit juice100 ml
- passion fruit1 unit(s)
- Sugar1 tablespoon
- Starch1 teaspoon
- Cold butter1/2 tablespoon
- Salt and spices1 to taste
- Season the salmon with salt, lemon and seasonings in a roasting pan.
- Cover with aluminum foil and bake at 200 degrees for 20 minutes.
- For the syrup over medium heat, add the passion fruit juice, fruit pulp, sugar and a pinch of salt. Stir well and let it boil for a few minutes.
- Then add the butter and the starch already diluted in a little water. Mix everything and turn off the heat.
- As soon as you take the salmon out of the oven, finish it with the passion fruit sauce.
