Ingredients

Salmon1200 kg
Sicilian lemon4 unit(s)
Salt to taste
Black pepper to taste
unsalted butter1 tablespoon
Water500 ml
Corn starch1 tablespoon
Olive oil to taste
Garlic2 unit(s)

Wash the salmon and dry it well with a paper towel, cut it into 10cm slices more or less.
Season with salt and pepper
Grease a mold with olive oil and place the salmon fillets. Bake in a preheated oven at 200 degrees for 20 minutes.
In a skillet melt the butter, sauté the 2 cloves of garlic cut in half.
Squeeze the lemons, use the rinds and zest them.
Add lemon juice to the skillet, dilute the cornstarch in the water and place it in the skillet. Stir well until thickened, add salt and pepper. Boil 3 minutes.
Remove the salmon from the oven and pour the sauce, drizzle with olive oil and place the lemon zest on top. Serve with roasted vegetables.
