- Pirarucu (pirosca)500 g

- Black or green olives to taste
- Rosemary to taste
- Salt to taste
- Black pepper to taste
- Extra Virgin Olive Oil to taste

- Start by seasoning the fish cut into large cubes with salt, lemon, black pepper and rosemary. Let marinate for about 10 minutes.
- While the fish rests, cook the coarsely chopped potatoes. Do not let it cook too long, as they are still in the oven.
- In a pan, sear the fish on all sides and set aside. In the same pan, lightly fry the onion and reserve.
- In a refractory, sprinkle with plenty of oil and place the fish, onion, potatoes, tomatoes, olives, whole garlic cloves, sprinkle with rosemary and drizzle with more oil. Until the ingredients are half submerged.
- Bake in a medium oven until golden!
- Tip: -The black olive matches the recipe very well. - boiled eggs goes very well. But, it's optional. - lots of rosemary. It goes well with fish. - The onion is cut in large size. - Fish can be substituted for tilapia.
