- Peeled and chopped cassava1/2 cup
- Water2 cup
- Salt1/2 teaspoon
- Olive oil1 teaspoon
- Chopped Onion2 tablespoon
- Crushed Garlic Clove1/2 unit(s)
- Tomato puree3 tablespoon
- Coconut milk2 tablespoon
- Clean shrimp1/2 cup
- Chopped green pepper2 tablespoon
- Chopped coriander1/2 tablespoon
- Palm oil1/2 teaspoon
- Nutrin Senior6 tablespoon
- Water1/2 cup
- In a large pot, place the water, cassava and salt.
- Bring to a boil and cook for about 25 minutes or until the cassava is soft. Remove from heat and wait for it to cool down a bit.
- In a blender, beat the manioc with 4 tablespoons of the cooking time, in order to obtain a cream that is not too thick. If necessary add more broth. Reserve.
- In a pan, heat the oil, sauté the onion and garlic.
- Add tomato puree and coconut milk.
- When it starts to boil, add the prawns and peppers and cook over low heat for about 5 minutes.
- Add the beaten and reserved cassava and heat.
- Turn off the heat, add the coriander, palm oil and Nutren Senior diluted in half a cup of warm water and mix well.
- Garnish with chopped cilantro and serve next.
