- Horsetail fillets with skin and boneless2 unit(s)
- Cornmeal3 tablespoon
- Oil4 tablespoon
- Lettuce leaves4 unit(s)
- Coriander to taste
- Lemon1 unit(s)
- Cherry Tomatoes10 unit(s)
- Mayonnaise1 tablespoon
- Black olives to taste
- Freshly ground black pepper to taste
- Extra Virgin Olive Oil1 tablespoon

- Prepare the mayonnaise by adding the juice of half a lemon, the chopped fresh coriander and the olive oil. Mix everything and set aside.
- Dry the mackerel fillets (your favorite fish) with a paper towel and season with salt and pepper to taste.
- In a dish add the cornmeal and season with a pinch of salt and pepper and mix until smooth. Pass the fillets in this mixture, remove the excess and fry in a frying pan with the heated oil, being careful not to smoke too much and leave the fish dark. Meanwhile, heat the bread (optional). Flip the fillets after 3 minutes and fry the other side for another 1 minute.
- Remove fillets and drain excess oil on paper towels or napkins. Cut them in half and assemble the sandwiches with lettuce, sliced tomatoes and lemon and cilantro mayonnaise.
- It's a light meal that fits like a glove with a cold beer on a hot day.
