- Bechamel Sauce ((firm) Proportion 50 g butter/50 g wheat and 300 ml milk, salt and nutmeg)70 g

- Mozzarella40 g
- Lemon (for shrimp and seasonings to taste) to taste
- clean the shrimp
- Season the shrimp with salt and pepper and then sauté in butter with olive oil. Reserve.
- Pre-heat the oven at 180 °.
- Take the pineapple and remove the core with a little of the pulp, leaving a boat.
- Prepare the béchamel, place it in the bottom of the pineapple.
- Place the shrimp over it and finish with the coarsely grated Parmesan.
- Cover with a slice and a half of mozzarella and take it to the preheated oven, covered with foil, carefully protecting the crown.
- After approximately 20 minutes, remove the paper and return to the fire, until browned.
