  • Clean Scallops300 g
  • Mango1 unit(s)
  • Tomato2 unit(s)
  • Parsley or cilantro to taste
  • Salt and Black Pepper to taste
  • Butter1 tablespoon
  • Olive oil to taste
  • Girl's Finger Pepper (optional) to taste
  1. Cut the mango into cubes. Remove the tomato core and cut into cubes too. Put in a bowl
  2. If you want, include a finely chopped girl's finger pepper, without seeds.
  3. Add the chopped parsley or cilantro, season with lemon, salt and pepper.
  4. In a skillet over medium heat, add the oil and butter.
  5. Grill the scallops on both sides until golden, being careful not to overcook. 1 to 2 minutes on each side is enough.
  6. Serve the scallops with the mango salsa on top. Tip: serve with cassava chips or sweet potato to accompany.
