Fish Curry with Broccoli

  • White fish in cubes1 kg
  • Coconut milk700 ml
  • Peanut Butter2 tablespoon
  • Curry paste or curry powder1 tablespoon
  • Broccoli in florets1 unit(s)
  • Fresh Basil1 cup
  1. Heat a drizzle of olive oil in a medium saucepan and sauté the curry paste until fragrant.
  2. Add the coconut milk and stir well with a whisk so that it dissolves in the coconut milk.
  3. Add the peanut butter and mix well. Taste and adjust the salt. Let it boil.
  4. Season the fish with salt and add to the pan, along with the broccoli. Let everything get submerged and cook for 7 minutes, until the fish is cooked. Taste and see if you need to adjust the salt.
  5. With the fire off, tear the basil leaves and add to the pan. Serve with jasmine rice, basmati rice, or any white rice.
