  • Arborio rice3 cup
  • Clean shelled shrimp1 kg
  • Chopped Onion1 unit(s)
  • Garlic cloves4 unit(s)
  • Grated cheese to taste
  • Cottage cheese2 tablespoon
  • cream3 tablespoon
  • Shrimp stock1 unit(s)
  • White wine1/2 cup
  • Butter2 tablespoon
  • Salt to taste
  • Olive oil to taste
  • Pepper to taste
  • Chives to taste
  1. Put the butter and oil in a pan, add the onion, let it fry and add the garlic, let it fry.
  2. Then add the rice (already washed), fry a little.
  3. Add 1/2 cup of wine, 2 tablespoons of dissolved broth and cooking water. (You can make homemade too) Once the rice is cooked, turn it off and set aside.
  4. In a high skillet, fry the onion (1 dot of a spoonful of butter) add the prawns, I didn't let them sit too long so they wouldn't get rubbery, the pepper, parsley and chives (if you like) then the rest of the dissolved broth.
  5. Cook until soft (about 5 minutes). Add the reserved rice, grated cheese and curd. Correct the salt to taste. Add the cream, let it boil for a few minutes and turn it off. Serve then, accompanying tip toast.
