- Desalted cod, cooked and shredded350 g
- Black olive30 g
- A pinch of black pepper to taste
- Parsley and chives1 tablespoon
- Olive oil1 dessert spoon
- Eggs3 unit(s)
- Grated Parmesan Cheese50 g
- Grated Mozzarella100 g
- In a bowl, place the cooked cod, black olives, black pepper, a drizzle of olive oil, parsley, chives, mix and set aside
- In a mixer, beat the egg whites, add the egg yolks, the grated Parmesan cheese and beat a little more
- Turn off the mixer, add some of the stuffing and mix
- On a platter greased with olive oil, place the beaten eggs, the stuffing, the mozzarella and cover with the rest of the beaten eggs.
- Sprinkle mozzarella, a drizzle of olive oil and bake in a preheated oven at 200 degrees for about 30 minutes and be happy!!
