- Wheat flour (for the dough)280 g
- Butter180 g
- Egg Yolk1 unit(s)
- Salt (for the dough)1 teaspoon
- Shredded desalted cod500 g
- Wheat flour (for the filling)1 tablespoon
- Whole milk1 cup
- Palm Heart (glass)1 unit(s)
- Catupiry280 g
- Chopped Onion1/2 unit(s)
- Olives to taste
- Salt and Black Pepper to taste
- Green Smell to taste
- Grated Parmesan to taste
- for the dough: put the flour in a bowl, add the cubed cold butter. Knead the cubes of butter with your fingertips until everything turns into a wet crumb. Add salt and the yolk, work with your hands until uniform. With your hands put it in a shape at the bottom and edges, cover the shape with cling film and take it to the fridge for 20 minutes.
- now the stuffing: in a pan add oil and butter. Saute the onion.
- add the palm heart, sauté. Add the olives and the cod.
- add the flour and sauté for 2 minutes. Add the milk and let it thicken.
- when it thickens, finish with the green smell.
- put the filling in the fridge until it cools down, do not put the hot filling in the pie!
- take the dough out of the fridge and add the cold stuffing. Cover with catupiry, spread with a spoon, finish with the grated parmesan.
- bake at 200 degrees for 45 minutes or until the dough and cheese are golden brown.
