  • Boyfriend fillets about 150/200g per person4 unit(s)
  • Clean shrimp400 g
  • Shrimp shells and heads to taste
  • Celery stalks2 unit(s)
  • Coriander stalks3 unit(s)
  • Onion1 unit(s)
  • White wine1 cup
  • Fresh cream300 ml
  • Coconut milk200 ml
  • Chopped coriander to taste
  • Black Rice240 g
  • Onion1/2 unit(s)
  • Garlic Cloves2 unit(s)
  1. Cut the onion into mirepoix, celery and coriander stalks. In a deep pan, heat the oil well and brown the shrimp shells and heads over high heat until they turn pink. Add the vegetables in mirepoix, let the water dry a little. Deglaze with white wine, wait for all liquid to evaporate. Cover with hot water and boil over low heat for 30 minutes.
  2. Cook the black rice in plenty of salted water until al dente, about 45 minutes. In another pan, sauté the onion and garlic and add the cooked rice to season it.
  3. In a frying pan with very hot oil, brown the shrimp quickly on both sides. Season with salt and pepper, remove and set aside. Deglaze the skillet with white wine and let the alcohol evaporate, add the shrimp broth. Let it reduce a little and add the cream. Let it reduce a little and add the coconut milk. Add salt and pepper.
  4. Season the fish fillet with salt and pepper. Grill in skillet over medium heat until each side is lightly golden. If the fillet is more than two fingers thick, finish with 5 minutes in the oven at 180 degrees.
  5. When everything is ready, growing the Prawns in the skillet with sauce, add finely chopped cilantro and stir well. Serve in a deep dish with the black rice, the fish on the side and the sauce on top.
