  • Salt and pepper to taste
  1. Cut the peppers into strips, the onions into quarters, the potatoes in half, lengthwise and each half into 6 pieces.
  2. With the cod already desalted, place it in a large roasting pan measuring 40 cm x 35 cm with 1 cup (tea) of olive oil, between the pieces, distribute the potatoes, peppers, tomatoes, onions, garlic heads cut in half and the olives. Season with salt and pepper to taste and drizzle with the remaining oil.
  3. Bake in a preheated oven at 180 degrees for 40 minutes.
  4. Then water the cod and vegetables with the liquid from the roasting pan and let it bake for another 20 minutes in the oven at 200 degrees.
  5. Remove from the oven, add the boiled eggs and serve.
