Aipim Gnocchi with Acai Sauce with Shrimps

  • Aipim, peeled and cut into large cubes400 g
  • Garlic Cloves4 unit(s)
  • Acai pulp200 g
  • Clean shrimp (without shell, head and internal dirt)200 g
  • Fresh chopped coriander to taste
  • Chopped pickled girl's finger (see pepper tip in profile)1 unit(s)
  • soy sauce2 tablespoon
  • Mix of cracked and roasted chestnuts (Pará, walnuts, peanuts, almonds) to taste
  • Wheat flour2 tablespoon
  • Lightly beaten egg2 tablespoon
  • Extra Virgin Olive Oil4 tablespoon
  • Freshly ground white pepper to taste
  • Nasturtium or arugula leaves to taste
  • Edible flowers (optional) to taste
  1. Cook the Aipim in salted water with two cloves of garlic
  2. In a large skillet, heat the oil over low heat and add 2 sliced garlic cloves. When they start to get soft 2/3 minutes, remove and set aside. Heads up! Remove any and all pieces of garlic to avoid creating bitterness in the oil.
  3. Increase the heat and when the skillet starts to smoke add the shrimp little by little without stirring and brown one side.
  4. Remove the shrimp and add the açaí pulp, pepper, coriander, soy sauce and the sweaty garlic. Cook over low heat for 5/6 minutes. Meanwhile, season the prawns with salt and freshly ground white pepper.
  5. Remove the cooked cassava while still hot from the pan with a slotted spoon, draining the water well and place on a clean bench. Mash well with a fork and remove the fibers. Let it cool and add the beaten egg and flour little by little, sifting over the top. Season with salt and mix everything gently until it forms a uniform dough that does not stick to your fingers. Let rest 20 minutes.
  6. Bring a large pot of salted water to a boil. Meanwhile, sprinkle flour on worktop and make toppings with the dough, cut the gnocchi and place them on a board covered with a clean floured cloth.
  7. Drop the balls into the boiling water and heat the sauce over medium/low heat. As the gnocchi rises to the surface, remove with a slotted spoon and place in the sauce. Now heat the shrimp quickly in another skillet.
  8. Assemble the plates and serve hot. Happy Valentine's Day! ❤️
