Crab burger with coalho cheese and caramelized mango - Recipe created in a kite in Rio Grande do Norte

- Shredded Crab Meat1 kg
- Cashew nut flour300 g
- Lemons2 unit(s)
- Salt to taste
- Curd cheese600 g
- Mangoes2 unit(s)
- sugar4 tablespoon
- Lettuce to taste
- Tomato to taste
- Burger buns6 unit(s)
- Season the crab meat with the juice of 2 lemons and add salt to taste.
- Add the cashew nut flour (you can get the flour by grinding the cashew nuts in a blender) bhule mix until you get a homogeneous paste.
- Separate portions with 150g and model the hamburgers. (Reserve)
- In a frying pan, add the sugar to caramelize and add the mangoes cut into thin strips. Let it cook for 5 minutes.
- Fry the burgers in hot oil until golden.
- Cut the curd cheese into strips and melt in a skillet or griddle.
- Assemble the buns with lettuce and tomato, place the hamburger, the cheese and finish with the caramelized mango. This recipe was inspired by the cuisine of Rio Grande do Norte and created from my experiences at Pipa beach for the project Viajando no hamburger Brasileiro.
