Corte em cubos pequenos as carnes, a gordura e o bacon. 



Cut the meat, fat and bacon into small cubes.


Misture e passe pelo moedor de carnes. (Também pode sem triturado em processador ou batido na ponta da faca). 


Mix and pass through a meat grinder. (It can also be ground in a food processor or beaten with a knife).


Acrescente o sal, a mostarda e misture até obter uma massa homogenia. 


Add the salt, mustard and mix until you get a homogeneous mass.


Separe "bolinhas" com 180g cada, jogue-as de uma mão à outra para compactar. 


Separate "balls" with 180g each, throw them from one hand to the other to compact.


Modele em formato circular com uma espessura de 2cm. (Você pode usar as mãos ou um aro de inox).

Grelhe na frigideira, chapa ou churrasqueira por 5 minutos de cada lado, ou até obter o ponto desejado.
