- Italian Zucchini100 g
- White or purple onion100 g
- cherry tomato100 g
- Eggplant100 g
- Red or Yellow Pepper50 g
- Oregano2 g
- Thyme2 g
- Rosemary2 g
- Olive oil50 g
- Salt to taste10 g
- Minced garlic5 g
- Lemon 1 unit in juice30 g
- Cut all ingredients into medium cubes. Reserve.
- In the frying pan, put the oil, the onion and let it brown until it toasts a little bit.
- Add the pepper (if you don't like it, don't put it in. Put the eggplant and let it brown a little.
- Add the zucchini and cherry tomatoes, let them brown, stir carefully so as not to crush the ingredients.
- Cut a lemon in half and squeeze through to caramelize the ratatouille and bring acidity, if necessary add more lemon.
- Add garlic, oregano, salt to taste, chopped thyme and rosemary.
