- Let's start by seasoning the Chester or the chicken (the one I bought was already seasoned, but I washed it with plenty of water and lemon). Grate or beat the onion in the blender and then strain it, we will only use the water that it will let go. Season the Chester with garlic, salt, pepperoni, olive oil and onion water. Let it rest in the seasoning for at least 40 min. Grease the refractory where you are going to bake the Chester with bottled butter.
- In a small bowl, add the orange juice and the soy sauce... Pour the mixture over the Chester, cover with aluminum foil and let it bake for 2 hours.
- Then remove the foil and let it brown until it's the color you like the most. To help, I brushed it with butter... And to accompany it, I put some pre-cooked potatoes to roast together with the Chester when he was browning, and I added olives and whole cherry tomatoes...
