- Margarine3 tablespoon
- Wash and dry the chicken. Don't forget to remove the giblets from inside the chicken.
- Season the chicken with lemon, salt, pepper, paprika, rosemary and squeezed garlic. Rub the seasoning all over the chicken, including the inside. Leave to marinate for as long as possible, preferably overnight.
- Place the chicken in a roasting pan, and place the onion cut into 4 parts inside the chicken. Intercale 1 piece of onion with a little margarine until filling the chicken. Cross the thighs and tie with twine.
- Grease the chicken with margarine and bake in a preheated oven at 200°, covered with aluminum foil, for about 1 hour.
- Meanwhile, cut the potatoes in half and lightly cook them. Don't make them too soft.
- After 1 hour, remove the foil, add the potatoes and water the potatoes with the broth that formed. Sauté the chicken a little more. Place some oregano and rosemary on top of the potatoes and bake, without aluminum foil, for another 30 minutes, or until golden.
