- Shredded and Seasoned Chicken200 g
- grated mozzarella1/2 cup
- Dried Oregano to taste
- Cut the eggplant in half lengthwise and remove the pulp.
- In a roast, fill the 2 halves with the shredded chicken. Top with cheese and sprinkle with oregano.
- Place in a preheated oven at 200ÂșC and bake for about 20 minutes or until the eggplant is cooked.
