  • Pepper to taste
  • Salt to taste
  • Breadcrumbs (bread)300 g
  • Eggs2 unit(s)
  • Turkey breast300 g
  • Mozzarella cheese300 g
  • Tomato3 unit(s)
  • Leek1 unit(s)
  • Saffron1 coffee spoon
  • Olive oil3 cup
  • Starch1 tablespoon
  • Water500 ml
  1. Roulade: Cook the chicken according to your taste, I made it in pressure with bay leaf, basil and salt. Once ready, just shake it to unravel easily.
  2. Now add the rest of the seasonings, you can use whichever flavor you like best!
  3. Do not sauté after putting the seasonings, the final cooking will be done in the oven!
  4. Add the breadcrumbs and eggs and see the point to roll. I used cheedar cheese to add color and flavor, being my filling for the rocambole.
  5. With the help of a parchment paper or aluminum foil, just open the dough and fill according to your taste and roll and press to get it well in shape! The right point of the dough makes this work very smooth.
  6. To hold everything together when roasting, I used turkey breast and sliced mozzarella cheese. Putting the slices and pressing the bottom to fit well, I finished with the mozzarella cheese all over the swiss roll lining. Place in the oven until the cheese is browned.
  7. For decoration I used tomato, basil and red onion.
  8. Garlic Sauce: As a side dish I made a leek sauce with saffron in olive oil.
  9. Simple process: Cut the leek into slices, pull it in the olive oil, add water, saffron, starch and salt to taste. It's a beautiful golden sauce, bringing delicacy and beauty to your plate! Use your creativity! Bon appetit!
