- Orange juice1 cup
- Salt and pepper to taste
- Fine herbs1 teaspoon
- Olive oil1 tablespoon
- Butter50 g
- Corn starch1/2 tablespoon
- Sugar1 tablespoon
- Fresh Rosemary sprigs4 unit(s)
- Season the chicken the day before with salt, pepper, herbs, olive oil and orange juice. Leave to marinate in the fridge.
- Place the chicken pieces on a baking sheet and reserve the marinade. Spread butter on top, a sprig of rosemary and bake in a preheated oven at 200° for 30 minutes.
- Remove the baking sheet from the oven and carefully drain the liquid that has formed. Combine this liquid with the reserved marinade.
- Return the chicken to the oven until golden brown.
- Mix the marinade and baking dish liquid with the starch and sugar. Bring to a boil to thicken. Adjust salt and seasoning if necessary.
- Serve the sauce over the chicken pieces.
