- Season the thigh and drumstick and brown them on all sides in the oil. Cook until they are soft. cool. Shred the meat and sauté with the onion, garlic, carrot and celery. After the vegetables are soft, add the annatto and peppers. Cook with the broth and thicken with the corn flour, until you get a firm point. Correct the salt if necessary. - CHICKEN BROTH Wash the chicken bone. In a pressure cooker, place the bone and all the coarsely chopped vegetables. Cover with water and pressure cook for 10 minutes (counted when it starts to sizzle). Strain the broth through a fine sieve.
